Cheesy Campfire Potatoes are low cost and filling, but it is best when prepped at home, ahead of time. They are compact and keep nicely in the tin foil in the cooler… especially convenient when motorcycle camping!
Place 1 peeled, sliced potato on 2 stacked pieces of heavy duty foil. Drizzle with olive oil and sprinkle liberally with salt and pepper. If desired, add 1/4 teaspoon of dried thyme and oregano. Seal and wrap foil around the potatoes. Roast in the oven at 375 degrees for 40 minutes or until the potatoes are fork tender. Allow to cool and refrigerate until you are ready to use them at the campsite.
At campsite, place cooked potatoes on the fire or on the grill. Heat through. Remove from heat and unwrap cooked potatoes, shaping the foil into a bowl around the potatoes. Add a slice of cheese to each potato and return to heat. Allow cheese to melt and serve.
